In an effort to save some cash, I planted a small vegetable garden this spring. I’ve had some successes and a few failures but needless to say my small vegetable garden has outgrown its little plot. The biggest garden hog has been my zucchini plants. I planted a mound of three plants and they over grew their allotted space and took most of the adjacent perennial flower garden. Fortunately, I’ve already gotten a bunch of zucchini from these plants so I had to forgive them.
Well this morning I went out to the garden to poke around for any new zucchinis that might have grown in the last couple of days and to my shock found this monster! Somehow, I never saw this zucchini which was growing quite nicely in my flower garden. Notice my hand and a normal (slightly large) zucchini in the picture for comparison.
Now here’s my dilemma. I can’t bear to throw this monster zucchini out. I know it won’t be nice and tender like a normal sized zucchini but there’s got to be something I can do with it – I hate waste! Here’s a few recipes I’m thinking about trying with my monster zucchini today:
